I know, right!? What on earth is a medlar, and why is our liqueur sparkling?

Let us introduce you to this weird and wonderful fruit, affectionately nicknamed 'Monkey’s Bottom', thankfully not because of the flavour, but thanks to its unusual appearance.

Originally native to the eastern Mediterranean and southwest Asia, medlars were brought to Europe by the ancient Greeks and Romans. They became hugely popular in medieval England, though they eventually slipped out of fashion and into near obscurity.

You don’t eat medlars straight from the tree. Instead, they’re left to blett, a natural process where the fruit softens and begins to ferment slightly, turning brown, squidgy, and sweet. That’s when the magic happens.

Once bletted, the flavour is rich, deep, and completely unique – a blend of apple purée, ripe figs, cinnamon, and sometimes a touch of wine or caramel. They’re fantastic in jellies, tarts, and most importantly for us, as the heart of a proper summer liqueur.

Our medlar liqueur comes in a gift pack with tonic water and a garnish set, all neatly tucked inside a lovely cotton drawstring bag.

We’ve found that the crisp bitterness of tonic water perfectly balances the natural sweetness of the liqueur, helping to bring out the soft, caramelised fig and spiced apple flavours that make the medlar so special.

A few years ago, John Cailes handed us a bag of thoroughly bletted medlars (you can probably imagine the look on our faces). As a thank you to John, and as a nod to his sparkling personality, we decided to add a little edible glitter to the final recipe. Just enough to catch the light and raise a smile.
